Native yeasts ferment completely destemmed fruit after a cold soak, with 10 month aging in oak drawing out silky tannins and persistent fruit. Fresh, floral notes with aromatic hints of cherry and blackcurrant unfold with gentle cellar time. Bourgogne at its most mineral driven and alive.
